Balsamic Strawberries.

Summer marks the peak of strawberry season. Italians are well-versed in utilizing ingredients at their freshest, and right now, strawberries are at their prime. This straightforward dessert elevates a plain bowl of strawberries. (Though technically, strawberries aren't classified as berries.)
Ingredients
16 ounces fresh strawberries, hulled and large berries cut in half
2 tablespoons balsamic vinegar
¼ cup white sugar
Directions
Place strawberries in a large bowl. Drizzle vinegar over strawberries, then sprinkle with sugar. Stir gently to combine. Cover and let sit at room temperature for at least 1 hour but no more than 4 hours.
Grind black pepper over strawberries just before serving and top with whipped cream.
It's crucial to use quality balsamic vinegar. How can you identify it? In a good balsamic, Grape Must should be listed as the first or second ingredient. You can also check for the DOP seal. Many inexpensive balsamics found in grocery stores are merely flavored distilled vinegar.
