Chicken Chili Verde

This easy recipe comes from oldschoolkevmo, who is easily the biggest social media chef on Instagram and TikTok. It's quick, easy, and all in all, from start to finish, you can be eating in about an hour. This was a big hit with the family.



Ingredients

2 chicken breasts

4-5 cups chicken broth

1 onion, chopped in large pieces

8 cloves of garlic

1 Anaheim chile, deseeded

1 jalapeño chili, deseeded

5 tomatillos

1 bunch of cilantro

2 TBS oregano

1 lime

salt

pepper

avocado oil


Directions

Add the two breasts to a pot with 1/4 of the chopped onion and four cloves of garlic.

Pour chicken stock into the pan over the chicken until it just covers the breasts.

Simmer for 40 minutes or until breasts are done.

Remove breasts from the pan, and reserve the broth


Heat another pan and add 3 TBS of avocado oil. When it comes to temperature, add the chiles, peels tomatillos and half of the remaining onion, and four cloves of garlic.

Heat until the chiles start to brown and onions are tender. Add a pinch of salt and pepper, then cover with the stock from the chicken.


Simmer the chiles for 15 minutes or so until all ingredients are soft.

Meanwhile, as chiles simmer, shred the cooled chicken breasts.

Once chiles are tender, use a stick blender (or pour into a regular blender) until all the chiles are pureed.

Then add in oregano, cilantro, a squeeze of lime juice, and blend again for a few pulses.

Add the chicken into the pot, stir well, and let it simmer for 10-15 minutes.

Salt and pepper to taste


Chop the remaining onions into a small dice.

Serve in a bowl over rice, add chopped onions and cilantro on top. Squeeze more lime juice on top and serve with chips.
