This is one of our collaborative recipes. My wife discovers the recipe and suggests I cook it, and I do. It comes together quickly, taking only 20 minutes from start to finish, with minimal preparation. We found this on Instagram from a user called food_queen_44. Overall it was a win, quick, easy, economical meal that the whole family will love. recipe called for thighs but I had breast so that's what I used.

Ingredients
4 boneless skinless chicken thighs
1/2 cup cranberry sauce (whole berry)
1/3 cup fresh orange juice
1 tbsp orange zest
2 tbsp honey
1 tbsp soy sauce
1 tsp Dijon mustard
1 tbsp olive oil
2 garlic cloves, minced
1/2 tsp dried thyme (or a few fresh sprigs)
Salt and black pepper, to taste
Fresh thyme and orange slices for garnish
Directions
Season chicken thighs with salt and pepper.
In a skillet over medium heat, add olive oil and sear the chicken until browned on both sides (about 4-5 minutes per side). Remove and set aside.
In the same skillet, add garlic and sauté for 1 minute. Stir in cranberry sauce, orange juice, zest, honey, soy sauce, mustard, and thyme.
Simmer for 3-4 minutes, then return chicken to the skillet.
Spoon glaze over chicken, cover, and cook on low for another 10-12 minutes until the chicken is cooked through and the sauce is thickened.
Garnish with fresh thyme and orange slices. Serve hot
