Delicious and Simple Quick Artichoke Salad Recipe, Perfect for a Party

This recipe comes from my aunt and is always a big hit at our family gatherings. And it's as simple as opening a few jars and doing just a little chopping. My kids love this salad. FYI, if you have some left over, it makes filling for a quiche or frittata.



Ingredients

1 33 oz can of Marinated Artichoke quarters ( or 4 cups)

1 cup pitted Kalamata Olives 1 cup Cherry Tomatoes sliced in half lengthwise

1 cup Bella Mushrooms stems removed, and sliced thin,


Directions.

This couldn't be simpler. Pour the Artichokes and their marinade into a bowl, add the other ingredients, stir, and let it sit for about 20 minutes before serving.
