Ground Beef, Zucchinin, and Sweet Potato Skillet.


A one-pan dish, with very few ingredients, that is not only easy to make but also filling and delicious, yes sign me up. This is one of my wife's favorite recipes.

Ingredients

1 lb Ground Beef

2 Medium sweet potatoes, peeled and diced

2 medium zucchini, sliced

1 onion, diced

2 cloves of garlic, minced

1 tablespoon of olive oil

Salt and pepper to taste

1 tsp paprika

1 tsp dried oregano

1/2 cup shredded cheese (optional)

Fresh parsley, chopped for garnish


Directions

1. Begin by prepping all the ingredients.

2. Cook beef in a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks, and drain excess fat.


3. Sauté Aromatics: add diced onions and minced garlic to the skillet, cook for 3 minutes until softened and fragrant.


4. Stir in sweet potatoes and season with salt, pepper, paprika, and oregano. Cover the skillet and let cook for 10 minutes or until tender, stirring occasionally.


5. Add zucchini once the sweet potatoes are almost done. Continue to cook for another 5 minutes until zucchini is tender but firm to bite.


6. Finish and serve. If you're adding cheese, sprinkle it over the skillet and allow it to melt. Garnish with fresh chopped parsley before serving.
