Pasta Gigi

This straightforward pasta recipe is shared by Chef Steve from the Vivaldi Way channel on YouTube. The dish, named possibly after his wife, features mushrooms in a cream sauce. It's ideal for serving two people and pairs wonderfully with a nice Sauvignon Blanc, making it perfect for a cozy date night at home.

Annotated Cooking Notes: This dish comes together quickly. Everything in the pan cooks in less than 10 minutes.



Ingredients

1 cup oyster mushrooms, chopped

1 shallot, sliced into rounds and broken up into ribbons

1 package prosciutto, 4 oz, sliced crosswise

1/4 cup white wine

1 1/2 cups cream

1 cup baby spinach

1 package pappardelle egg noodles

3 tbsp butter

8 oz tomato sauce


Directions:

Prepare ingredients.

Boil water, add salt.

Melt butter in a large pan and add shallots. After 1 or 2 minutes, add mushrooms with salt and pepper.

Let this soften up for a few minutes.

Add pasta to the water.

Add the spinach and prosciutto to the pan, stir, add the white wine, and let it cook for a minute.

Add the cream and tomato sauce, and stir to combine.

After the pasta has cooked for 2 1/2 - 3 minutes, add it to the pan, stir it into the sauce, and let it cook for 2-3 minutes. Try to flip it in the pan to get air into the pasta.


Plate in a bowl, and sauce over top.


Optional upgrade. crisp one piece of the prosciutto in a toaster oven, pull it out let it harden up an cut into strips and use as a topper on the pasta.
