Tzatziki Sauce

This is a recipe for a quick and simple summer treat. This versatile sauce can enhance the flavor of any dish, from lamb and homemade gyros to a basic veggie platter.

Ingredients

1 medium cucumber

1/2 (16 ounce) container of plain Greek yogurt

1 1/2 cloves of garlic, minced

1 tablespoon of olive oil

1/2 tablespoon of chopped fresh dill

Juice of 1/4 medium lemon

Salt and ground black pepper to taste


Directions

1. Peel the cucumber and remove the seeds with a spoon. Grate the cucumber using the large holes of a box grater, then squeeze to remove excess liquid.


2. In a food processor, blend the grated cucumber with Greek yogurt, garlic, olive oil, dill, lemon juice, salt, and pepper until smooth.


3. Serve immediately, or for optimal flavor, cover and refrigerate.

and refrigerate for at least 1 hour before serving.
