Vodka Rigatoni with Crispy Prosciutto

This is a simple and fast one-pan pasta that can be prepared in just a few minutes. By starting to crisp the prosciutto and boil the water simultaneously, you can have this dish ready in about 30 minutes from start to finish. I adopted This recipe from the Youtuber Chris Red Hots



Ingredients

3 Tbs Butter

1/2 white onion, diced

3 cloves garlic, chopped

1/2 cup vodka

3/4 cup heavy cream

1 cup red pasta sauce

1 cup grated Parmesan cheese

1 package prosciutto

Basil leaves

1 package mezzi rigatoni

Directions

Crisp prosciutto by cooking in a 350-degree oven for 15 minutes or air fryer for 5-7 minutes. Let cool. Melt butter in a large skillet, sauté onions until soft, then add garlic for 1 minute. Pour vodka off the heat, return to flame, and burn off alcohol. Cook pasta in salted boiling water until al dente.

Add cream to skillet, reduce, then stir in 1/2 cup Parmesan. Add pasta sauce until salmon pink. Combine pasta with sauce, reserving water. Cook a few minutes more, stirring.

Add 1 cup pasta water and remaining Parmesan. Chop prosciutto, reserving some for garnish, and add to sauce. Heat 1 minute, then add basil. Serve in bowls, topped with crispy prosciutto and Parmesan.
